- Winemaking
Machine harvested when fully ripe, the Riesling grapes were delivered to the winery at around 13° Baumé. The fruit was promptly crushed and pressed before being despatched for fermentation with specially selected yeast strains. The ferment was carried out in stainless steel and once completed the wine was clarified and stabilized, then bottled under screw-caps.
Tasting Notes
This delightful wine shows lifted lime and citrus notes with a slight hint of lavender. It has a very appealing flinty, mineral palate with green apple fruit characters up-front.Subtle apricot tones and crisp, refined acidity finish the wine off in a most refreshing manner.

The Pinot Gris was grown at a small boutique vineyard in Mt. Torrens, in the northern Adelaide Hills. Hand picked at 13.5° Baumé , cooled to 4°C and then whole bunch pressed.A portion was then fermented in 2 year old French oak and the remainder fermented in stainless steel tanks. After 6 months in barrel, the two were combined to create a French style Pinot Gris.
Tasting Notes
Fermented in two year old French oak barriques, adding a measure of depth to the colour and having a major impact on the rich, mouth-coating palate. Ripe stone-fruit aromas with green-apple and pear flavours.

Winemaking
The Cabernet Sauvignon and Merlot grapes were harvested at around 14° Baumé then despatched to the winery where they were crushed and processed separately. Both varieties spent time in new and seasoned oak for around 18 months before assessment of the individual barrels, assembly of the final blend and then bottling.
Tasting Notes
This full bodied Cabernet-Merlot blend displays herbaceous, leafy nose with a dusty, raspberry mid-palate. Smooth and mouth-filling enjoyment now, the subtle but firm tannins combined with oak-derived vanilla finish indicate a wine that will age well in bottle.

Winemaking
Our Merlot grapes were machine harvested and arrived at the winery at around 14° Baumé. After crushing, a portion of the fruit was fermented on skins before the juice was transferred to a mix of French and American oak to complete ferment. It then saw a further 18 months in new and seasoned wood before assembly and bottling.
Tasting Notes
The colour is a deep, rich, cherry purple, with a bouquet of fragrant blackcurrant, cassis and plums. The palate then delivers a wine that is soft and approachable, yet has the depth and structure to suggest good cellaring potential. This Merlot is complex and mouth-filling, with a long and firm tannin finish.
